PLAIN SIGHT
Tom grew up steeped in Norwegian heritage — Lutheran church smörgåsbords, smelt fries, dishes quietly woven into the fabric of Minnesota life. But somewhere along the way, those flavors became an obscurity. Families who came to America wanted to be Americans, not Norwegians in America. The culture was largely left behind.
Years into a culinary career, Tom found himself craving the food of his ancestry — and it simply wasn't as represented as one might except from the largest populatoin of Nordic decendants in the US. Scandinavian cuisine was mostly inaccessible in the Twin Cities. Not badly executed. Just overall absent in the resturant scene. That absence planted a seed.
WHERE THE
IDEA WAS FORGED
In 2022, Tom traveled to many of the Nordic countries — Norway, Sweden, Denmark, and Iceland. Not as a tourist checking boxes, but as a chef with a question slowly forming. He moved through each country absorbing the street food culture, the flavors, the casual pride with which people ate extraordinary food.
In Bergen, Norway, he found a hot dog stand. In Copenhagen, Denmark, he tasted something that surprised him — a genuinely high-quality hot dog that showed what this street food staple could truly be. But it was the final stop that sealed everything.

On the last leg of the trip, the idea that had been forming for months finally locked in — hot dogs weren't just a vehicle. They were the story.

The original plan had been something closer to a bistro truck — small plates, refined service. But the Nordic countries showed Tom something better. Over there, hot dogs weren't a compromise. They were loved without apology, made with care, and eaten by everyone.
Tom returned to the Twin Cities with a clear vision: bring those authentic flavors — Danish remoulade, lingonberry ketchup, house-made slaw — to a format people could grab at a street corner. Nordic Dogs was founded in 2023, built high quality ingredients with every topping crafted from scratch.

ONE AND THE SAME.
For as long as Tom can remember, two worlds have competed for his identity — the kitchen and the stage. Culinary-trained and an active member of the Twin Cities' heavy metal community, he's always been told to choose. He never did.
Nordic Dogs is where that duality stops being a contradiction. The Nordic countries are one the spiritual homelands of modern heavy metal — and that's not a coincidence Tom was willing to ignore. The same raw power, the same precision, the same refusal to politely fall in line lives in every dog.
The Twin Cities don't get enough credit for their metal scene. Tom knows it — he's been living it. Every plate is a small tribute to the north, to the noise, and to the community that shaped him.

Before Nordic Dogs, Tom spent years feeding people in a different context —from fine dining to running food programs in elementary schools, Tom knew that a great meal changes something in a person regardless of age. That philosophy didn't leave when he got behind the wheel of the truck.
He traded professional kitchen walls for wheels so he could go where people actually are — breweries, festivals, street corners — and bring something genuinely unexpected. A hot dog rooted in a culture most people here have never tasted, served by someone who grew up right here in Minnesota.
This is his way representing the Twin Cities. With a chef's precision, and a musician's energy, tactfully sharing the slice of cultural circles many can indentify with and ever can take part in.
